Would you say that Super Mario 64 is the video game equivalent to Toy Story?

Toy Story came out in 1995. Super Mario 64 came out in 1996.

Toy Story was the first feature-length computer-animated film. Super Mario 64 is the first significant video game that was extensively in 3D.

Both titles are considered some of the best in their respective mediums despite being so new and pioneering just about everything they're known for. Would it be fair to say that the two are thus analogous to each other?

The first 3D game was 3D Monster Maze in 1981, however the first ever fully 3D game? Possibly Descent for PC released in 1994? https://www.youtube.com/watch?v=Bh6_l6gUy4A

I guess so? I don't know how much influence Toy Story truly had in its genre honestly.
Switch Wants:Zelda BotW, Mario Odyssey, Skyrim SE (?), Xenoblade2, Stardew Valley
Maybes:Yooka Laylee, Minecraft, LEGO City Undercover, Pokemon, SSB, Splatoon2

Didn't Doom come out before this? It isn't fully 3D (Enemies are just sprites) But the levels are.

Doom was released in 1993, but Wolfenstein 3D was released in 1992.

There have, however, been many stereoscopic 3D games released before that. For example, Famicom Grand Prix II: 3D Hot Rally in 1988.
